Recipe: Shrimp Ceviche -My Favourite Appetizer.

Ceviche is a traditional Latin American dish that typically consists of raw fish or seafood marinated in citrus juices, such as lime or lemon juice. The acid in the citrus juice "cooks" the fish or seafood, causing the proteins to denature and change colour. It is then mixed with herbs, spices, and vegetables. Ceviche is typically served chilled as an appetizer or light meal and is enjoyed in countries like Peru, Equador, Mexico, Costa Rica and other Central and South America.

Shrimp Ceviche Recipe:

Ingredients:

  • 1 lb. raw shrimp, peeled and deveined

  • 1/2 cup fresh lime juice

  • 1/4 cup fresh lemon juice

  • 1/4 cup fresh orange juice

  • 1/2 cup diced red onion

  • 1/2 cup diced tomatoes

  • 1 jalapeño pepper, seeded and diced

  • 2 cloves of garlic, minced

  • 1/4 cup chopped cilantro

  • Salt and pepper to taste

  • Avocado and tortilla chips for serving (optional)

Instructions:

  1. Cut the shrimp into small bite-sized pieces and place them in a large glass or ceramic bowl.

  2. In a separate bowl, mix together the lime juice, lemon juice, and orange juice. Pour the mixture over the shrimp.

  3. Add the diced onion, tomatoes, jalapeño pepper, garlic, and cilantro to the bowl and mix everything together.

  4. Season with salt and pepper to taste.

  5. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until the shrimp are opaque and firm.

  6. Before serving, taste and adjust seasoning as needed.

  7. Serve the ceviche chilled, garnished with cilantro and avocado, accompanied with tortilla chips if desired.

Note: Ceviche is a raw fish dish, and if you want to use raw fish instead of shrimp, you can do that as well, but it is important to make sure that you are using fresh and safe to consume fish. Also, citrus juices are very important as it will "cook" the fish, so make sure to use enough of it.
