I love oatmeal raisin cookies but I dislike that they all have refined sugars in them which are not good for us. I am by no means a nutritionist or an expert on this topic but I am a HANGRY Real Estate professional so I love having these cookies on hand with me in the car on the go.
2 Cups of Almond Flower
1/2 Cup of Flax Seed Meal
1/2 Cup of Unsweetened Shreaded Coconut
1/2 Cup of sunflower seeds
1/2 Cup of pumpkin seeds
1/2 Cup of Maple Syrup
1/2 Cup of Liquid Coconut Oil
1/2 Cup of Rasins
1/2 Cup of Chocolate Chips (I love the no dairy ones from bulk barn)
1 tbsp of cinamon
1/2 tsp of salt
1 tsp of vanilla extract
2 eggs (or 1 large duck egg)
Preheat Oven to 325 F
Mix All Dry Ingredients together
Mix All Wet Ingredients together
Stir Wet Ingredients into the dry ingredients
Line cooking sheet with parchment paper & drop spoon fulls of batter onto the sheet
Bake for 15 min.
Cool & Serve
I ultimately make double this recipe and freeze the cookies for an ongoing snack for a few weeks. HAPPY SNACKING You fablously busy people.
