Recipe: Organic Guacamole



Now, as big as my garden is I currently have not mastered growing avocados in Canada. However we do have some LARGE avocado plants they take 6+ years to produce and so far no luck so we will need a little help from our local grocery store.


Organic Guacamole Recipe

Ingredients:

  • 2 ripe avocados

  • 1/2 small red onion, finely diced

  • 1 jalapeno pepper, seeded and finely diced

  • 1/4 cup chopped fresh cilantro

  • 2 tablespoons freshly squeezed lime juice

  • Salt and pepper, to taste

Instructions:

  1. Cut the avocados in half and remove the pit. Scoop out the avocado flesh and place it in a medium-sized mixing bowl.

  2. Mash the avocado with a fork or a potato masher until it reaches your desired consistency.

  3. Add the diced red onion, jalapeno pepper, and chopped cilantro to the bowl. Mix well.

  4. Squeeze the lime juice over the mixture and stir to combine.

  5. Season with salt and pepper to taste.

  6. Cover and refrigerate the guacamole for at least 30 minutes to allow the flavors to meld together.

  7. Serve the guacamole with tortilla chips or as a topping for tacos, burritos, and other Mexican dishes.

*For extra flavor, you can add diced tomatoes or crushed garlic. You can also add a tsp of sea salt or organic apple cider vinegar.


This recipe is great as it is organic, with ingredients that are fresh, unprocessed and free of pesticides. The combination of avocado, lime juice, and cilantro creates a delicious and healthy dip that can be enjoyed with tortilla chips, as a topping for tacos and burritos, and as a side dish for many other Mexican dishes.
